Alexander Valley Chardonnay and Jose's Ceviche
Ceviche – to serve 20
5 lb. red snapper, small dice
½ lb. tomatoes, small dice
3 bunches scallions
1 white onion, small dice
½ bunch cilantro
1 Cup tomato juice
2 Cups lemon juice
Salt and pepper to taste
Tostaditas, small (either store bought, or corn tortilla fried in oil until crispy)
Marinate the fish with lemon juice for 2 hours. In the meantime, chop tomatoes, scallion, onion, cilantro – small dice. Mix with tomato juice, salt and pepper. Add vegetables to the fish and adjust seasoning. Serve on small tostaditas.
