Rose' of Cabernet and Smoked Salmon Mousse
Smoked Salmon Mousse – to serve 20
Ingredients:
2 lb. smoked salmon
4 shallots medium, chopped
8 oz. cream cheese
3 Tablespoon lemon juice
1 Tablespoon dill
Salt and pepper to taste
Garnish – chives and capers
4 baguettes made into crostini – rub with EVOO, salt and pepper and toast
Put the salmon in food processor with shallots, cream cheese, lemon juice and dill. Blend well until all ingredients are incorporated. Add salt and pepper to taste. Serve on toasted corstinis and garnish with chives and capers.
